what kind of mixer are you using?? are you recording from your booth monitor outlet?? if you are using a djm 500 there is a little knob on the back make sure it is not turned all the way up

whats your sound card? if you just plugging into the stock built in one in your comp, that could be your problem... check your leads as well, maybe its a bad cable.
can you elaborate on what your definition of "muck" is? does it sound like low bit rate? clicking and popping? distortion?
I can attest that if you are running a good cable out of your dj mixer, into your sound card, your output level staying bellow 0db, and monitoring that signal from the computer to double check that the signal is clean and crisp... theres no reason why you should end up with a poor quality recording with audacity.

I record off my decks using audacity all the time. i use the booth monitor output with the level a little bit below half way. You dont need to output a high sound level, since audacity will pick it up fine. It might just be your sound card. Perhaps it has a low quality line in sound processor.
Make sure the record quality is at 44.1 khz as well
